  • 50 grams of sugar (+ 100 grams for syrup)
  • 1 egg (protein)
  • 50 ml of pure water
  • a pinch of citric acid

The recipe for cooking at home

  1. Pour kefir into a bowl, add sugar, pour in vegetable oil and beat thoroughly with a whisk until smooth. Quench soda with vinegar and add to kefir, stir. Gradually sift the flour through a sieve into kefir, constantly stirring the mass.
  2. The dough should gradually become thick, but remain soft so that it can be taken with your hands and it does not stick. Put it on a table sprinkled with flour and knead the dough with your hands. Too much flour should not be.
  3. Roll out a layer of dough about 1-2 cm thick from a ball of dough and cut out circles in a small round shape (a glass or a glass). Preheat the oven to 180C, cover the baking sheet with parchment paper. Put the cakes on the baking tray.
  4. Bake homemade gingerbread cookies for about 10 minutes at the indicated temperature. Do not dry out as soon as they are browned - remove the pan and leave it for 10 minutes. While the gingerbread cookies are baking and cooling, prepare sugar syrup.
  5. Pour water into a saucepan and put on fire. Warm it up to a warm state and pour sugar in, mix thoroughly. Cook the syrup over low heat, stirring for about 5 minutes until slightly thickened.
  6. Remove syrup from heat and cool to barely warm temperature. Put the prepared, slightly cooled gingerbread cookies in a pan with syrup and mix well. Put sugar gingerbread cookies on a laid baking sheet and leave them to soak for 15 minutes.
  7. Meanwhile, prepare the protein glaze. To do this, separate the protein from the yolk and beat with a pinch of citric acid for several seconds with a mixer. Then gradually pour 50 g of sugar and continue to whisk until a stable foam.
  8. Roll the gingerbread soaked in syrup into protein foam and put on a baking sheet or wire rack covered with parchment paper. Preheat the oven to 100C, send the pan for about 10 minutes to harden the glaze.
  9. Remove the pan and leave it to cool for a couple of minutes. Homemade gingerbread cookies on kefir are ready, you can serve them with tea, coffee or milk. Enjoy your meal!
